Green + The Grain will be the latest food truck to expand with a brick-and-mortar restaurant this spring.
The food truck concept, known for its healthy, fast casual salads and frozen yogurt, will get a new location in LaSalle Plaza this spring. Owners Tiffany Hauser and Dustin Naugle made the official announcement to The Journal that the restaurant will be in the former Cookies & More space.
The brick-and-mortar location will have many of the same items, from salads, wraps and frozen yogurt, but it will expand to include a small breakfast menu, house-made soups, an additional yogurt flavor and more salad and wrap options.
“Our menu on the truck was really quite limited, so we are extremely excited to be able to showcase our full potential with this new menu,” Hauser said in an email. “We’re hoping it becomes a really cool, intimate place to meet [for] breakfast, lunch and [a] [midday] snack.”
The shop will seat 25 to 30 people and share a staff of around 8 to 12 staff with the food truck. Hauser described it as “industrial” and “minimalist” with “natural accents.” It’s slated to open June 1.
Typically, Green + The Grain can be found along Marquette or South 6th Street and South 2nd Avenue. Its website is currently under construction, but eager fans can follow the food truck on Instagram, Facebook or Twitter.
The food truck is just one of many food trucks expanding to retail locations. Vellee Deli, World Street Kitchen and Hola Arepa have all combined their mobile markets with traditional restaurants.
