If it seems like The Untamed Cart, Minneapolis’ latest street food vendor appeared out of nowhere, it’s because owner Joe Radaich wanted it that way. Radaich, who also owns Sporty’s Pub at 2124 Como Ave SE, deliberately launched quietly to have a few days to work out the kinks.

“It’s day three,” said Radaich. “We think we’ve basically got it figured out now.”

Radaich has been interested in street food since the first meetings were held and proposed a truck last summer. That initial plan was rejected by the city, so Radaich returned this year with a converted hot dog cart at 10th and Nicollet. But the cart’s origins and Sporty’s college fare don’t say anything about the food it offers.

“I’m excited about the culinary side of things,” said Radaich. “It was really fun to come up with the recipes. College kids won’t necessarily eat this.” The initial menu for The Untamed Cart includes a Porketta sandwich with fennel-roasted pork, arugala, pickled onions and horseradish on ciabatta bread, as well as a Mexican Pot Roast sandwich with radish, cilantro and a fantastic homemade salsa.
