The Lone Grazer Creamery recently began production in The Digging, an artisanal food production hub started by local entrepreneur Kevin Folliard.
The company, originally called Skyway Creamery, is based out of a 31,000-square-foot building at 1401 Marshall St. NE. where it’s producing cheese with milk from grass-fed cows in Minnesota. Folliard founded the business and runs it with his son Seamus and former Caves of Faribault cheesemaker Reuben Nilsson.
The creamery currently produces cheese curds, string cheese and ricotta cheese. The cheese curds are available in about 18 markets and co-ops across the Twin Cities.
The Lone Grazer Creamery joins artisanal meat makers Red Table Meat Co. and small business consulting firm Digging LLC in the food enterprise incubator, formerly known as The Food Building. Folliard has also founded 2 Gingers Irish Whiskey and several Irish pubs in the Twin Cities.
