The Northeast Investment Co-op (NEIC) has found another tenant for the building it’s renovating on Central Avenue.

Aki’s Backstube, a German-style bakery and coffee shop, will occupy 1,400 of the 6,500 square feet in the northern half of 2504/6 Central Ave. Recovery Bike Shop has purchased the southern half from the co-op.

Owner Aki Berndt says he hopes to begin constructing his shop by mid-November with the intention of opening by January. He immigrated to the US from Germany in 2000 and started baking professionally four and a half years ago.

Since then, he has developed a passionate customer base selling his bread at farmer’s markets around the metro.

“I’m working 75, 80 hours a week and I can’t even keep up right now, it’s crazy,” said Berndt.

The NEIC has grown to 170 members after forming in November 2011, but still needs help to complete its planned renovations. Visit neic.coop for more information on membership.
