Inside Chimborazo

Chimborazo is “a small restaurant with a big heart” in Northeast Minneapolis – but the restaurant offers more than just food.  Restaurant owner, Marcos Pinguil, hosts live music from Ecuador Manta on Thursday nights to help customers experience an authentic Ecuadorian atmosphere.  Pinguil says he thinks the restaurant is successful because he cooks food that would actually be served in an Ecuadorian home – “the good stuff.”
