Gastrotruck shifts to soups this winter, pushes back restaurant opening

Local food truck Gastrotruck will stay running this winter by changing up its menu to offer soups, stews, chowders and chilis.

It will be rebranded as Soups On Board and operate from 11 a.m. until 1:30 p.m. Thursdays and Fridays at the intersection of 6th Street and 2nd Avenue near Capella Tower.

Gastrotruck opened its catering kitchen next-door to Gasthof's at 2400 University Ave. NE in the spring, and originally planned to open a restaurant there this fall. Co-owner and chef Stephen Trojahn said that business was too busy over the summer to complete renovations, so now an opening date sometime next spring is more likely.

"We did completely redo the interior, HVAC, and have the kitchen up and running," said Trojahn. "Now we just need to do the guest bathrooms, design the restaurant floor layout and bring in tables and chairs and such. Now it's time for all of the fun stuff." Trojahn added that they are not hiring any outside contractors to perform the work, which has made the renovations take much longer.

The menu for Soups On Board will change daily, and will be posted each morning on the Gastrotruck Facebook page and on the @Gastrotruck Twitter feed.

Soups will be available in two sizes, and prices will range from $4 to $7. Larger containers of hot soup will be available for groups, and quarts of cold, ready-to-heat soup will also be offered for those wanting a take-home option.

The original Gastrotruck will still be available for catering and special events.
