Merchant rebrands as Spoon and Stable


Gavin Kaysen, chef and owner of a highly anticipated restaurant in the North Loop neighborhood, has decided to switch the name from Merchant to Spoon and Stable

The highly acclaimed chef who left a job as executive chef of Café Boulud in New York City is planning to open his new restaurant at 211 N. 1st St. in mid-November. 

The name is inspired by his habit of stealing spoons and the restaurant's history. The 6,400-square-foot space was built as a horse stable in 1906.
