Red Cow restaurant is planning on opening its third location on the ground floor of Velo apartments next February.
According to Luke Shimp, owner of Red Cow, it will be more than 1,000 square feet larger than his other two locations, in south Minneapolis and St. Paul.
There’s room on the patio for about 80 people, and renowned bartender Jesse Helms is helping Shimp develop a craft cocktail menu. The food menu will feature the same gourmet burgers with inventive toppings that has made Red Cow a hit in its south Minneapolis location. The St. Paul location will open June 17.
